Organic Oat Bran Pancakes



1 cup Oat Bran (I use Arrowhead Mills brand)
1 egg beaten or egg substitute
1 tbsp. Canola Oil
1 tbsp. honey
2/3 cup milk or rice milk
1/4 tsp. sea salt



  1. Stir all ingredients only until lumps disappear
  2. let batter sit for one minute
  3. Cook on preheated (375-400 degrees F) lightly oiled griddle or pan, turning when bubbles form on surface and edges begin to dry. 
For thicker pancakes, use less liquid. For thinner pancakes, use more liquid. 
Suggested variations: Stir in one or more of the following into the batter just before cooking: 1/4 cup fresh berries, 1 tsp. vanilla, 1/2 tsp. ground cinnamon, 1/4 cup chopped nuts.
